  • 1 mashed banana
  • 1 tbsp of melted butter or margarine

  • 1 tsp of baking powder
  • 1 large egg
  • 2 tbsp of skimmed milk
  • 3/4 cup of white flour

  • Peel the banana before using it, and you make sure that the butter r the margarine you use is diet, the regular ones will add 60 extra calories to the recipe. Splenda, a no calorie sweetener, can be replaced with other ingredients, if one decides an artificial sweetener is not the best choice. If so, replace Splenda with ½ cup of real sugar and make sure you double the banana quantity.

    You can also try to use half real sugar and half sugar substitute. Also, the rum may be substituted with almond extract or vanilla extract, depending on one’s tastes and preferences.

    Now, preheat the oven at 350F degrees and take 2 mini baking pans and spray them with non-stick cooking spray.
    Take all the ingredients above and mix them into a medium bowl, until they reach a smooth texture. Pour the mixture into the two mini baking pans and cook for 20 minutes, until the breads reach a golden-brownish coloration.
