Lemon Pineapple Pie Recipe

The lemon pineapple pie is a delicious and creamy recipe, and you won’t believe how low in fat it actually is! Lightly bakes and with plenty of tasteful ingredients, this pie is the perfect solution when one desires a healthy dessert recipe, while still enjoying a truly unique moment of a unique taste.


The lemons have an uncertain origin, but there are many historical proofs of its use in medicinal purposes, especially due to their antiseptic properties. Cultivated for decorating the Islamic gardens, or as a medicinal fruit, lemons begun being used for flavoring and cooking only in the late 1700s in America, where they were brought by none other than Christopher Columbus, and, since then, they even inspired diets. Rich in vitamin C, but also in calcium and potassium, lemons are now used both in culinary and non-culinary purposes.

When it comes to the culinary use of lemons, there are plenty of things to say. Lemons are used when making marmalade, lemonade, to garnish drinks, or as a main ingredient in drinks, for marinating various types of meat, especially fish, as lemons neutralize the odors.
Lemons are also used for their juice to marinate meats, but in combination with other ingredients. Lemons can be even turned into pickles, like in Morocco, where they are considered a true delicacy. Lemons are used in cakes, in fruit salads, as an additional ingredient in many sauces and in pies.

The lemon pineapple pie includes and mixes the unique citric taste of lemons with the delicious taste of a tropical fruits like the pineapple, a popular ingredient in many fruit cocktails, fruit salads, and other various desserts. This low calorie dessert needs the following ingredients:

  • 1 cup reduced fat graham cracker crumbs (about 16 squares)
  • 1/4 cup margarine, melted
  • 8 ounces of sugar free cook and serve vanilla pudding mix
  • 2 cups of water, divided
  • 3 ounce sugar-free lemon gelatin
  • 1 can unsweetened crushed pineapple, well drained
  • 8 ounces of light frozen whipped topping, thawed
  • sliced lemon and strawberries and fresh mint, optional

  • The preparation steps are easy and simple. Mix the margarine with the cracker crumbs and put the mixture into a pie plate, covering the bottom and the sides of the plate. Bake for 8 to 10 minutes at 350F degrees, then set aside and let it cool.

    Take a saucepan and prepare the pudding, by mixing the pudding with 1-1/2 cups of water. Stir until it boils, then also set aside and let it cool. In another saucepan, the remaining water need to be boiled; when it boils, add the gelatin and stir until it’s dissolved. When ready, stir it into the pudding mixture.

    Add now the pineapple and wait until it’s completely cooled. add the whipped cream and then pour the whole mixture over the cracker crumbs mixture and refrigerate for a couple of hours. Before serving, garnish with strawberries, sliced lemons and the fresh mint.
