  • 2 large William Pears, preferably organic
  • 3 tbsp of Splenda
  • 14 whole cloves
  • 2 star anise
  • 75cl bottle of alcohol-free rose wine
  • 1 tbsp of water
  • 1 tbsp of arrowroot
  • 1 scoop of fat-free ice cream

  • Each pear should have a slice cut off the bottom, in order to have a flat base. After that, peel each pear and keep the stalks for a later decorative use. Take a pan and place on its bottom the pear together with the wine, but make sure to fill it just to the point where the stalks begin. Take the pears out and bring the pan to boil at a medium heat.

Stud meanwhile each pear with 8 cloves, then, when the pot begins boiling, gently add the pears, the Splenda and the star anise, and simmer for 45 minutes, over low heat, until the pears are soft. Remove them from the liquor mixture and place them in a heatproof dish, so that they stay warm. Cover in foil and set aside.

In a cup, mix the water with the arrowroot. Remove from the pan most of the liquor, leaving just about an inch in the bottom, then add the arrowroot mixture and bring back to boil. Boil until the quantity of syrup reduces itself to half and until it reaches a strong consistency, coating the back of a spoon when lifting it out. When ready, pass the syrup into a sieve and then pour the result over the pears, saving the star anise for the presentation. The fruits should be garnished with low-fat ice cream.
